5!

This week went by really fast. Probably because we had a mid-week date night to celebrate Greg's birthday. All in all, it was a good week. This weekend should be even better. We are going to an O.A.R. concert tomorrow night for Greg's birthday and the rest of the weekend we have no plans. Looking forward to sleeping in, relaxing and working on my Pinterest Challenge Project.

1. I have a new niece who was born yesterday, baby Evalynn


2. Made some really delicious stuffed mushrooms for dinner, recipe here



3. I got 'Phantomed" at work. What a nice little treat :)


4. Greg's birthday was Wednesday so I made something containing 2 of his favorites: Cookie Dough & Cheesecake


5. We went to Badlands last weekend to do some off-roading. I've been meaning to do a post about it, but haven't got around to it yet. This is what some of the adventures looked like

Pumpkin Bread

I made pumpkin bread for work last week and had enough to share with Greg's co-workers and keep a lot at home. It still tastes just as good as day one and I got a lot of compliments. The recipe can be found on Kraft Recipes, I made a slight adjustment below.



Pumpkin Cream Cheese Bread

1/2 cup butter, softened
1 pkg (8 oz) Low-fat Philadelphia Cream Cheese, softened
2 1/2 cups sugar
4 eggs
1 can (15 oz) pumpkin
3 1/2 cups flour
2 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder
1/4 tsp. ground cloves
1/2 cup pecan pieces


HEAT oven to 350°F. Beat butter, cream cheese and sugar in large bowl with mixer until well blended. Add eggs, 1 at a time, mixing well after each addition. Blend in pumpkin. Gradually add combined dry ingredients, mixing after each addition just until moistened. Stir in nuts.
POUR into 2 greased and floured 9x5-inch loaf pans.
BAKE 55 min.or until toothpick inserted in centers comes out clean. Cool 5 min.; remove from pans to wire racks. Cool completely. Slice bread to desired thickness and enjoy :) 

It makes two loaves and you can freeze one for up to a month. Perfect!

Fall Fun

Saturday was a great fall day. We spent most of it running errands, but made sure to squeeze in a trip to the farm. We have been so busy on the weekends, we had yet to pick pumpkins. Someone had recommended Irons Fruit Farm, which is about 20 minutes away in Lebanon. We made the trek over and it was so worth it. We enjoyed a hayride, picking pumpkins bigger than our head and the most delicious apple fritter. Next year we will make sure to go back when we have more time and enjoy their huge corn maze.

My Friday 5

This week went by pretty fast. I had a few late nights watching the Tigers games, but nothing coffee couldn't fix in the morning. We have a busy weekend including trips to the pumpkin patch and an off-road park. I will also be spending Saturday morning meeting the one and only Young House Love at their book signing. I am so pumped! I get their book before it comes out and will probably be reading it from cover to cover on Sunday :)

1. Tigers swept the Yankees and are headed to the World Series!!

2. Stir fry for dinner. Soy sauce, teriyaki, veggies and noodles all mixed together in a big wok, then topped with peanuts!


3. Halloween candy time. Caramel suckers are the best


4. Got another 100% on a quiz for class!

5. Baked some yummy pumpkin bread for a work breakfast. Good thing there was leftovers to keep at home
